speghetti squash, cooked
spinach, cleaned
roasted red peppers
goat cheese
pine nuts, toasted
balsamic vinegrette (good seasons works fine) Directions
place the warm speghetti squash on top of the spinach so that it wilts slightly from the heat
top with roasted red peppers & goat cheese
sprinkle with pine nuts
dress with balsamic vinegrette
