Course: Sauce Ingredients
6 lbs pears, cut in quarters. Remove seeds and stems (I usually peel, too)
3 lbs sugar
2 oz. crystallized ginger, cut up
Directions
Let stand overnight, covered.

Next AM, add 3 lemons, cut in very thin slices. Cook slowly 2 1/2 hours.

Yum. It's like pear marmalade.
