Course: Main Ingredients
1 T butter
1 chopped onion
3/4 lb diced red onion
2 c frozen or fresh corn kernels
2 c milk (or half/half)
1 c vegtable broth
1 1/2 T thyme
1 c shredded sharp cheddar
1 c crab Directions
saute onion until glassy. add potaoes, corn, mil, broth and thyme. simmer until potatoes are soft (abt. 15 min.). add cheese, salt, pepper and crab. heat through and serve.
